Dinner time ...

Ham and Beans ...

Plain and simple ...

In a crock pot ...

Even more simple ...

Why in the world have I not tried this sooner???

Enjoy!!!

Crock Pot Ham and Beans


1 lb package dried northern beans

Ham Bone with at least 1 pound of ham on it

2 tsp onion powder

6 cups water

Salt & Pepper to taste


Rinse and sort the beans for any pebbles.

Add the the rinsed beans ...

Onion powder ...

Salt and Pepper ...

And ham to the crock pot.

Add water.

Cover and cook on low about 8 hours ...

Until beans are tender.

Remove ham bone ...

And pull off the meat.

Add meat to the crock pot and mix.

Serve with cornbread.

M.I.A.

I know ...

I know ...

I know!!!

I have been totally neglecting all of you.  I do not mean to.  I really don't.  I try to blog ... I really try to make time to get to the computer and post something.

After all ... there ARE 24 WHOLE hours in a day.  I have plenty of time between 10 pm and 6 am to post something.

I apologize.

But truth be told ... my mind has been 100 places ... and my body has been to at least 75 of those places.

Clint and I have our plates full.

Between Eythen's baseball practice twice a week ... which Clint coaches, Eythen's soccer practice and soccer games twice a week ... which Clint coaches, Breeanna's private dance lesson on Tuesday, Breeanna's hip hop class on Wednesday, Breeanna's tap and ballet class on Thursday, Breeanna's dance competition class that is also meeting on Friday, Clint's kickball games on Friday, Harleigh's private dance lessons on Tuesday ... and then an hour later she goes back to the dance studio for a tap and ballet class ... I am on overload.  Don't forget the Honor Choir concerts, dance competitions, PTO meetings, meetings for the school carnival that I am helping put together again this year, Clint being on the Youth Football board, birthday parties, volunteering at the kids schools, dentist appointments, having lunch with my kiddos at school once a month and the panic attacks that I seem to squeeze in at the worst possible times (that is another story for a whole different time) ... we are going nonstop from the moment our feet hit the floor every morning.

And to top it off ... I don't work.  So why in the world can I not find an hour here or there to blog???

Well ...

Do you know the answer???

Because I sure the hell can not figure it out.

On the flipside ... some people exercise when they get stressed out ... some eat ... some drink.

Me ... when anxiety starts to take up every inch of my being ... I clean.

And let's just say ... my house is so clean you could eat off my floors.  Well ... ok ... you may not wanna do that.  Who knows what the hell our bitchy cat does on those floors when no one is looking.  I am certain she pees on them on purpose right after I mop them just to prove a point.

Eythen: If I eat the healthy one can I have all of it?

Eythen: The one that says milk chocolate.

Me: Milk chocolate does not make it healthy.

Eythen: I am pretty sure it is extra milky so that means it is extra healthy with all the milk in the bunny. So can I eat all of it?

Another year older ...

Well, I am officially another year older.

I have learned to embarace my thirties completely.

I did not want to turn thirty truthfully.  I wanted to remain in my twenties.

Twenties meant that I was still youthful.

Thirties meant that I was no longer ... well ... no longer young.

But I have learned that this is so untrue. I am still as silly, fun loving, crazy, snort when I laugh kind of girl that I was when I was twenty. But now that I am in my thirties ... I can be all of those things as a real "grown up".

I have to say though ... I have learned alot over the past few years.

Marriage and friendship ...

Two big things in someones life.

Right ???

Friendship ... as one gets older you do not have all those "bestfriend" that you had in higschool and junior high. You know what I mean ... every week you added someone else to your "bestfriend" list. In college you had you party girls and could never imagine life without them. As the years went on ... so did peoples lives; kids came into the picture, careers took charge, everyone moved in different directions. Before you even knew it ... you are suddenly keeping in touch once a year with a Christmas card. Which sucks.  But ... every friend comes into your life for a reason.  Some are there to teach you a lesson.  Some are there to hold your hair back as you are puking your brains out from all the shots you did at the bar.  Some are there for a brief moment to show you something.  And then ... there are those that are gonna be there no matter how many miles are between you and no matter how many days it had been since you last talked on the phone.

Marriage ... no one told me that it would be so much work at times. Clint and I have been together for 14 years this September 30th and married for 12 this September 23rd. We have pushed one anothers buttons daily for the past 14 years. But somehow ... some way ... over this past few years ... with everything that has been thrown in our direction ... we have became closer than I ever thought possibe. He makes me smile. I get goose bumps when he holds my hand. I smile just by simply thinking about him. He is my soul mate and I can not imagine life without him.  He is ... simply wonderful. I love him with all my heart.  Without him ... there is no me.

So basically what have we learned today boys and girls???


Getting older sucks ... no matter how wise I get through the years.

Instead of buying me some expensive present ... that I would just probably regift ... just vote for my blog instead and we will call it a day.

A perfect side dish ...

It is time to start the Easter menu ...

And I have the PERFECT veggie side dish to get put on your table this Easter Sunday.


Creamy Yummy Corn ... in a crock pot




2 cans of corn

1 block of cream cheese

1 bag of colby cheese

1 medium container of sour cream

3/4 cup parmesan cheese

Combine all the ingredients into a corck pot.

I even use the "juice" that is in the cans of corn.

Turn on low heat and stir every 30 minutes or so.

I normally cook this in the morning ... and then turn off the crock pot once lunch is ready.  It cooks pretty quickly ... but there is no way you can over cook it.

It is yummy goodness ... and it taste even better reheated with your left overs the following day.

On the Eve of the National Championship ...

Holy shit balls!!!


KU made it to the National Championship game.


NEVER in a BA-ZILLION years did I EVER think this was going to happen during the 2011 - 2012 basketball season.  NEVER.

The final two teams will meet tomorrow evening for a show down like nothing else.


And. I. Am. Terrified.


I am pretty sure I had a mild heart attack during the game last night against Ohio.

All of us were sitting outside watching the game ... and with 6 minutes left of the FIRST HALF ... I got pissed off and went inside.

Yes ... I threw a bit of a fit ... a wee bit too early.

As I was wallowing in my own self pity ... I suddenly realized that when we played on Sunday last week ... I showered RIGHT BEFORE THE GAME.

Like ... MINUTES before the game started.

That MUST be why we were loosing.

Had. To. Be.

So I darted upstairs ... took a shower ... and put all my aggression into a deep conditioning treatment.


Needless to say ... that shower saved the day because WE FREAKING WON!!!


You are welcome fellow KU fans.


So ... here we are ... on the Eve of the National Championship Game and I am so nervous I think I could pee my pants.


Now if we could all bow our heads and pray ...

Our Father ...

Who art in Lawrence ... 

Hallowed be thy Game.


Thy tourney come ... 


Thy championship will be done ... 


In New Orleans as it is in Allen Field House.


Give us this day our deserved National Championship. 


And forgive us our turnovers ... 


As we forgive Roy who double-crossed against us.


And lead us not into defeat ... 


But deliver us from Kentucky bias ...


For Kansas is the basketball kingdom ... 


And the tradition ...

For ever and ever.

P.S.  You can bet your bottom dollar that we will be eating Kentucky Fried Chicken for dinner Monday evening. Not that chicken has anything to do with Kentucky ... but we are gonna roll with it anyways and hope that it still brings up good luck.
